Ingredients: 1/2 - 1 onion, 4 Tbsp butter, 3 Tbsp flour, 2 cloves garlic, 1 - 12 oz light beer, 2 - 15.5 oz cans of chicken broth, 2 cups milk (I used 1 cup whipping cream & 1 cup 1% milk) 1 jar cheese whiz, 1 -8oz package shredded sharp cheddar cheese. 1/2 tsp Worcestershire sauce, and a pinch of cayenne pepper, salt & pepper.
Directions: I chopped approximately 1/2 a white onion into very small pieces. (My husband doesn’t like onions but he doesn’t seem to notice them in this soup.) Next, melt butter in bottom of large pot then add onions and saute for 1 minute. Then add the 2 cloves of garlic and continue to saute’ for another minute then mix in flour and salt & pepper which makes sort of a paste.
Add the can of beer and simmer for 5 minutes then add both cans of chicken broth stirring occasionally for approximately 10 minutes on medium heat.
Stir in the 15 oz jar of cheese whiz, then add package of shredded sharp cheese. Let heat through and thicken. Sprinkle with cayenne pepper. Garnish with chives, popcorn or crispy bacon pieces.
Delicious alone or served with soft pretzels. I cheated and used the box kind. I included a picture of what I used.
